If serving lobster whole, make a side plate of salad greens, beets, egg, and tomato. If the lobster meat is removed from the shell, arrange the salad on a larger plate, including the lobster meat. In either case, whisk together the oil, vinegar, mustard, and honey, and stir in the salt and capers. Serve in a small jug with a spoon.

BOILED CHICKEN

Chickens are often regarded as the most delicate and easy to digest of all animal foods. Certainly it is good food for all of us and especially for anybody who is sick. Narnian Dwarfs would always prepare a chicken to be absolutely delicious.

But it was a good meal otherwise, with mushroom soup and boiled chickens and hot boiled ham …

6 SERVINGS

1 chicken, whole or jointed, about 4 pounds

1 lemon

1 onion, quartered

1 carrot, scrubbed and cut into large pieces

1 tablespoon chopped fresh thyme, or 1 teaspoon dried

1 tablespoon chopped fresh sage or 1 teaspoon dried

1 bay leaf

1 teaspoon salt

8 peppercorns

Water or, for a richer dish, chicken broth

Gravy (see recipe below)

1. Wash the chicken thoroughly inside and out. Cut the lemon in half, and rub the chicken inside and out with the cut sides of the lemon, squeezing juice as you rub. Put the lemon halves into the cavity of the bird, or add them to the pot if the chicken is in pieces. Place the chicken in a pot just large enough to hold all the ingredients. Add the vegetables and seasonings and water or broth to cover.

2. Bring to a boil; then lower to a simmer. Cover the pot and cook for 1 hour or until juices run clear when the fleshy part of the thigh is pierced with a skewer.

3. If serving hot, remove the chicken to a warm platter and keep warm while making the gravy. To serve cold, allow to cool, then wrap and refrigerate. Strain hot broth and use for gravy or reserve for another use.
